
No-Bread deconstructed Egg-cucumber sandwich – Lunch
Remember the egg-cucumber sandwich from when you were a kid? You can still have it, sans bread! To make it auto-immune friendly minus the mayo and egg and substitute with tuna and tahini-garlic mayo.
2 hard boiled eggs or half a can of tuna.
Half a cubed cucumber.
Lemon juice.
Kewpee mayo or tahini-garlic mayo.
A small amount of cress if available or coriander leaves.
In a cereal sized bowl, layer the cubed cucumber. Squeeze the lemon juice. Top with sliced boiled eggs and squeeze on top the kewpee mayo. Top with cress leaves or coriander leaves.
Alternatively layer the cucumber with half a can of tuna, and coriander leaves with tahini-garlic mayo.
