Auto-immune friendly
- 1/4 pumpkin slices de-seeded without the skin
- 1 bell-pepper de-seeded
- Garlic cloves
- Peeled onions whole
- Zucchini fingers
- Potatoes with skin on but washed thoroughly, and halved or quartered.
Now spread all these veggies out in a sheet pan. Sprinkle over, pink salt, black pepper, white pepper powders, cinnamon powder, cumin powder, a dash of gram masala powder. Pour a cup of bone broth over the vegetables. Then a glug of extra virgin olive oil.
Put into the oven and bake 15 mins on one side at 180c. Then turn the veggies over and bake 10-15 more mins until golden.
If you’re using an air-fryer, line the basket with foil add the veggies, spices and broth and EVOO. Roast setting; for 15 mins. Turn the veggies over and roast the other side for 10 mins.
Enjoy steaming hot for dinner.
