Vegan Protein Pad-Thai in peanut sauce
- A palmful of soaked rice noodles.
- 1/4 cup of boiled chickpeas or from a can
- A palmful of grated carrot
- A handful of spring onions
- 2tbsps of cooking olive oil
- 1 tsp of minced ginger and garlic
- 1/4 tsp pink salt
- 1/4 tsp black pepper
- 1/4 tsp red chilli powder
- 1/4 tsp cumin powder
- broken up in to pieces
- Peanut sauce.
In a blender:
- 2 tbsps peanut butter
- 1 tsp soy sauce
- Black pepper to taste
- 1 tbsp EVOO
- A a little water to blend.
Noodles:
In a pan, heat 2 tbsps of olive oil and brown ginger/garlic and add the spices and stir 10 seconds. And add the grated carrot. Stir 3 mins. Now add the chick peas and fold through. 1 min.
Turn off the heat and add the pre-soaked rice noodles. And toss together. Once the peanut sauce is ready too the noodles and toss through like a salad. Garnish with green coriander leaves, and fresh green chillis if you wish. And squeeze a lemon through.
