Serves 2/3 persons.
Chop up all of the following and add to a large mixing bowl:
1 small red onion
4 chives
1/2 a cucumber
3 handfuls of mixed leaves and herb salad mix. It can contain rocket, baby spinach, Swiss chard, parsley, radicchio and basil leaves.
Grate or slice 50g of Red Leicester cheese. (Omit to make it auto-immune friendly.)
5 tbsps of quinoa.
Toss the dry ingredients together.
The dressing makes the salad. For this one, make a balsamic vinaigrette by combining in a small jug:
3 capfuls of organic balsamic vinegar.
3 tbsps of extra virgin olive oil.
1/4 tsp pink salt
1/4 tsp black pepper
A touch of dried oregano.
Beat vigorously, like you would an egg. And once it thickens pour over the salad and toss together.
Enjoy a bowl as it is or add any protein on the side if you’re extra hungry.
