DIY Coconut Milk
- For 2 cups of coconut milk.
- 1 cup of shredded coconut or desiccated coconut.
- 2 cups of hot water.
- Boil 2 cups of water in a kettle.
Then in a blender add 1 cup of the coconut and pour in the hot water over the coconut. Set a timer for 5 mins to let the coconut rest in the hot water.
Once the 5 minutes are up, blend the coconut-water for 2 minutes on high speed.
The contents are hot so please be careful.
Open the lid of the blender and get a sieve and a wide mouth measuring jug. Pour the coconut mixture through the sieve, and press the remaining liquid with a spatula from the remaining coconut mixture. The liquid is your fresh coconut milk!
Stir the milk with a spoon. Let it cool or drink hot for a warm comforting drink. Add cacao powder if you want an instant hot chocolate!
Store in a glass jar and refrigerate. However it’s best to use it within one day as once it cools the coconut separates from the water. In that case, blend again and use.
