
Ingredients:
- 4 tbsps of quinoa
- 1 cup of water
- Half a cucumber
- 1 mango chopped
- A handful of spring onions
- 4 olives of choice Kalamata
- A handful of mixed salad leaves chopped
Method:
In a small saucepan, boil one cup of water. Once it’s boiling add half cup of quinoa.
Let it boil and soak up the water. This will take 10 mins.
Now chop the cucumber, spring onion, and mango. Deseed the olives.
Mix the contents together in a salad bowl.
Make a dressing of:
2 tbsps extra virgin olive oil
1/8 tsp pink salt
1/8 tsp black pepper
Whisk together and pour over the salad
Toss together.
Put half of the contents in to a cereal bowl. Share the rest with your family! Or refrigerate for later.
