Peach and Greens Summer Salad
Peaches: a summer fruit whose arrival we all look forward to. Fury on the outside, juicy-tart-sweet on the inside, is perfect to be had in a salad on a bed of dark greens and juxtaposed to briny Kalamata olives and crumbly feta. That’s all the vitamins/minerals A-Z. To make it auto-immune friendly, minus the feta.
For 1 serving in a large bowl:
- 1 ripe peach cubed with the skin on.
- 4 black Kalamata olives
- 2 cubes of crumbly feta cheese
- Half a cucumber cubed with the skin on
- 2 handfuls of dark green salad mix
- A tbsp of sunflower seeds
- Add fresh basil leaves to the leaves
- Half a medium sized lemon juiced
- A drizzle of extra virgin olive oil (EVOO).
After washing all your plant foods, chop the salad mix into the large bowl you will eat out of. Then the peach and cucumber. Crumble the cubes of feta into on top. Tear apart the Kalamata olives into pieces and remove the pit. Add the flesh on top. Squeeze half a large lemon on to the salad. Drizzle on the EVOO. Toss the salad through.
Sit down and enjoy for lunch on a hot afternoon!
